Rachel Wright, with the Rockcastle Cooperative Extension Office, taught a seven day KYNEP class for students at Rockcastle Academy.
The Kentucky Nutrition Education Program (KYNEP) educates people to acquire knowledge, improve skills, and change behaviors necessary to achieve health and well-being. Students learned how to make low cost, quick, healthy meals; improve the use of food dollars; establish a breakfast routine; improve diets; reduce food-borne illness; all while participating in class discussion and tasting new foods. The Academy students tasted turkey spaghetti, sweet potato nachos, chicken ranch pizza, and other delicious, nutritious foods. After each class, Mrs. Wright gave students cooking tools to take home and use with their families to promote healthy eating.
